In fact, centennial duck eggs are kept for a few weeks to a few months in a mixture of clay, ash, salt, rice husk and tea. With this processing method, the texture of the protein changes to brown jelly, the yolk almost turns black while its center remains creamy. In taste, the centennial eggs have a strong egg flavor with a slight ammonia aroma. They are traditionally served as a cold appetizer along with tofu, chives, ginger pickles, steamed rice and pork.
